Derived from the Sanskrit (amar) meaning ‘immortal, eternal’, Amari intertwines a culinary narrative bridging the flavours of India and Mauritius. Guided by Michelin-Star chef Vineet Bhatia MBE, hailed as the pioneer of modern Indian cuisine. The design ethos is fitting with Chef Vineet’s own journey of transformation and growth. It is a contemporary interpretation of the rich cultural heritage and evokes a tropical tapestry through a palette of coral, blush, and sand hues.
The entrance portico leads you through an enfilade of intimate dining rooms and ends at the larger kitchen to reveal three bronze tandoori ovens. Each room is framed by ornamental wood and rattan portals and screens, adorned with clay lamps, ceramic tables and silk fabrics to give a natural holistic Indian appeal. The stone and tableware were also selected to accentuate the terracotta accents echoing the organic allure of the Mauritian landscape.
AMARIs signature fresco; hand painted by Daphne Doomun, a Mauritian Indian artist, is deeply rooted in Indian culture. The immersive fresco is painted in a style of folk art called Gond, which was one of the largest and oldest tribes in India. The style connected their homes with nature, highlighting fish, birds, trees and plants around them. The tree stands for spirituality, extending from earth to heaven as one of the tallest living things. Daphne, enriched their style, using natural dyed colors in the traditional dots and lines and blended it with Mauritian native influences. The pink pigeon, a Mauritian endemic rarified species, flies high above crowing the ceiling.
