Amari: Through The Lens Of Chef Vineet
Working with the Michelin Star Chef, Vineet Bhatias brought new inspiration to the design of AMARI. His personal journey and ethos underpinned the vision, representing the evolution and transformation of his life and food into extraordinary, contemporary Indian Cuisine. He needed a restaurant that celebrated this rich Indian heritage within a Mauritian tropical setting.


We wanted to enhance the guest experience by refining the ambiance and emphasizing the historical significance of the cuisine. The use of the hand-painted fresco, by Daphne Doomun, a Mauritian Indian artist, envelops Amari, which was one way to express how luxury can be created by modest means.

Similar to Chef Vineet’s approach of using humble ingredients to create a beautiful dish, our design challenge was to identify appropriate local materials and use the rarefied skills of local craftsmen. We wanted to create an environment that provides a luxurious experience in an understated and artistic manner. Rattan screens were intricately hand-woven by local villagers featuring decorative Indian-inspired patterns. Locally produced earthenware water jars and artifacts were sculpted and displayed on the kitchen shelves, while handcrafted stoneware showcases exquisite dishes reminiscent of Chef Vineet’s childhood. Finally, the saturated powdered finish of Amari, featuring its distinctive terracotta carmine color that pays homage to his Rajasthan heritage—where the sand is the color of clay – is perfectly balanced when contrasted with the tropical scenery and persistent lagoon views.
