Derived from the Sanskrit (Amar) meaning ‘immortal, eternal’, Amari intertwines a culinary narrative bridging the flavors of India and Mauritius. It is guided by Michelin-starred chef Vineet Bhatia, hailed as the pioneer of modern Indian cuisine.

The design ethos of Amari is a symbol of Chef Vineet’s culinary transformation and growth.  It is a contemporary interpretation of his rich cultural heritage blended into the Mauritian landscape.  It evokes a tropical tapestry through a palette of coral, blush, and sand hues.

A design journey…

The entrance portico leads you through an enfilade of intimate dining rooms and ends at the kitchen, revealing three bronze tandoori ovens. Each room is framed by ornamental wood portals and rattan screens, adorned with clay lamps, ceramic tables, and silk fabrics to give it a natural, holistic Indian appeal. The stone and tableware were also selected to accentuate the terracotta accents, echoing the organic allure of the Mauritian landscape.

AMARI’s signature fresco, hand-painted by Daphne Doomun, a Mauritian Indian artist, is deeply rooted in Indian culture. The immersive fresco is painted in a style of tribal Gond art. 

The Gonds use painting to integrate the natural environment into their home, emphasizing fish, birds, trees, and plants that surround them.

Daphne enriched their style, using natural dyed colors in the traditional dots and lines, and blended them with Mauritian native influences. The pink pigeon, a Mauritian endemic rarified species, is depicted high above, crowning the ceiling.
